Adobo Street Corn Dog Muffins with Fajitas Rajas Ketchup

Ingredients

 

Kid-Approved Hidden Veggie Ketchup

1 (10oz) bag PuraVida Foods Flame Grilled Fajitas Rajas

2 28oz cans crushed tomatoes

2/3 cup apple cider vinegar

½ cup water

2½ tsp sea salt

1½ tsp onion powder

1½ tsp garlic powder

¼ tsp celery seed

¼ tsp mustard powder

¼ tsp ground black pepper

1 tbsp tomato paste

 

Corn Dog Muffins 

1 8.5oz pkg corn muffin mix

1 cup PuraVida Foods Flame Grilled Adobo Street Corn & Peppers, thawed

1 egg

1/3 cup 1% milk

1 tsp garlic powder

1 tsp onion powder

½ tsp sea salt

¼ tsp Chili powder

4 beef or turkey hot dogs, cut into 1” pieces

 

Directions

  • Step 1

    Gather all the ingredients. Make the kid-approved hidden veggie ketchup. Add all ingredients, including PuraVida Foods Flame Grilled Fajitas Rajas into a pot and cook on medium heat for approximately 7 minutes. Turn the heat down to low and simmer for 10 minutes. Place everything into a blender and puree until smooth. Cool down and serve when ready.


  • Step 2

    In a medium mixing bowl add corn muffin mix, egg, milk, garlic powder, onion powder and sea salt, and whisk to combine.


  • Step 3

    Add in PuraVida Foods Flame Grilled Adobo Street Corn & Peppers into the corn batter and mix with a spatula.


  • Step 4

    Use either a muffin tin or egg bite mold, and spray with nonstick spray and fill with batter halfway. Then place a hot dog piece in the middle of each cup.


  • Step 5

    Cook in the air fryer at 320°F for 15 minutes or bake in oven at 400°F for 15 - 19 minutes.


  • Step 6

    Serve with ketchup. Enjoy!
