Hash Brown Melange Quiche Cups

1 large egg, beaten

2 cups frozen shredded hash brown potatoes, thawed

3 large eggs

1 10 ounce bag PuraVida Foods Vegetable Mélange, thawed

1/3 cup shredded mozzarella cheese

¼ cup shredded cheddar cheese

¼ cup grated parmesan


    • Step 1

      Preheat oven to 400 degrees F. Spray 8 muffin cups with cooking spray.

    • Step 2

      Combine beaten egg with hash browns and cheese. Season with salt and pepper. Press about ¼ cup potato mixture onto bottom and up the sides of the muffin cups. Bake for 15 minutes or until light golden brown. Remove crusts from oven and let cool slightly.

    • Step 3

      Prepare the filling. Whisk together eggs with PuraVida Foods Vegetable Mélange and shredded mozzarella. Season with salt and pepper.

    • Step 4

      Spoon filling into crusts and sprinkle parmesan on top. Bake for 5-8 minutes or until a knife inserted in the center comes out clean.

    • Step 5

      Remove from muffin tins and enjoy!
