Shrimp Paella Lettuce Cups

1 bag (10oz) PuraVida Foods Saffron Brown Rice Paella, thawed

8 butter lettuce leaves

2 lb. frozen shrimp 26/30, thawed

½ cup plantain chips, crushed

¼ cup Italian parsley, chopped


Shrimp Seasoning 

1 tsp paprika

1 tsp granulated garlic 

½ tsp sea salt

¼ tsp ground black pepper



  • Step 1

    Gather ingredients. Remove both the shrimp and PuraVida Foods Saffron Brown Rice Paella from the freezer to defrost.

  • Step 2

    In a small bowl, combine the shrimp seasoning spices and mix. Season shrimp with spice mix. Add 1 tbsp of oil to a sauté pan over medium heat. Add shrimp and cook approximately 2-3 minutes per side until they turn pink.

  • Step 3

    Reduce heat down to a low-medium heat and stir in PuraVida Foods Saffron Brown Rice Paella

  • Step 4

    Spoon the shrimp and rice mixture into the center of each lettuce cup.

  • Step 5

    Garnish with chopped parsley and crushed plantain chips. Enjoy!
