1 bag (10oz) PuraVida Foods Saffron Brown Rice Paella, thawed
8 butter lettuce leaves
2 lb. frozen shrimp 26/30, thawed
½ cup plantain chips, crushed
¼ cup Italian parsley, chopped
1 tsp paprika
1 tsp granulated garlic
½ tsp sea salt
¼ tsp ground black pepper
In a small bowl, combine the shrimp seasoning spices and mix. Season shrimp with spice mix. Add 1 tbsp of oil to a sauté pan over medium heat. Add shrimp and cook approximately 2-3 minutes per side until they turn pink.
Spoon the shrimp and rice mixture into the center of each lettuce cup.
Garnish with chopped parsley and crushed plantain chips. Enjoy!
