Fire Roasted Veggie Burrata Salad

 Ingredients

1 (10 oz) bag PuraVida Foods Fire Roasted Primavera Mistura

4 cups arugula

8 oz burrata cheese

2 tbsp toasted pine nuts

 

Roasted Red Pepper Sherry Vinaigrette 

1/4 cup sherry vinegar

1/3 cup extra virgin olive oil

3 oz roasted red peppers

1 tbsp honey

1 tsp Dijon mustard

1 clove of garlic

½ tsp sea salt

¼ tsp ground black pepper

 

 Directions


  • Step 1

    Gather all of the ingredients.


  • Step 2

    In a blender, add sherry vinegar, roasted red peppers, honey, mustard, garlic, and salt and pepper and blend together. Slowly pour in the extra virgin olive oil until emulsified and reserve for later.


  • Step 3

    Cook PuraVida Foods Fire Roasted Primavera Mistura per instructions on the back of the bag and allow it to cool to room temperature.


  • Step 4

    Assemble salad by starting with a bed of arugula on a large plate then top with PuraVida Foods Fire Roasted Primavera Mistura and fresh burrata cheese.

    Season cheese with salt and pepper and drizzle with dressing and toasted pine nuts. Enjoy!
