Citrus Pistachio Quinoa Salad

2 bags (2 x 10oz) PuraVida Foods Citrus Herb Organic Grains 

2 cups arugula

4 oz feta cheese, cubed

¼ cup roasted pistachios

1 large pink grapefruit, peeled and segmented 


Champagne Vinaigrette 

6 tbsp extra virgin olive oil

3 tbsp champagne vinegar

1 tsp dijon mustard

1 tsp tahini 

1 tsp agave

1 tsp Herbs de Provence

½ tsp sea salt

¼ tsp ground black pepper


Roasted Carrots 

4 carrots, roughly chopped into medium sized chunks

1 tsp garlic paste

1 tsp extra virgin olive oil

½ tsp dried thyme

½ tsp sea salt

¼ tsp ground black pepper



  • Step 1

    Preheat oven to 375°F. Gather ingredients for salad. Microwave PuraVida Foods Citrus Herb Organic Grains according to the package instructions and set aside to cool.

  • Step 2

    In a small mixing bowl add all ingredients for the champagne vinaigrette except for the oil. Whisk together and then slowly pour in the oil until emulsified. In another mixing bowl, add all the ingredients for roasted carrots and toss together until carrots are coated. Arrange on a baking sheet and bake for 15 minutes. Remove from oven and cool to room temperature (these can be prepped ahead of time as well).

  • Step 3

    In a large serving bowl, add arugula as the base, and top with PuraVida Foods Citrus Herb Organic Grains, the champagne vinaigrette dressing and gently toss.

  • Step 4

    Top with the roasted carrots, grapefruit segments, cubed feta cheese and pistachios and serve. Enjoy!
