Moroccan Couscous Soup

 Ingredients

2 (2 x 10oz) bags PuraVida Foods Mediterranean Couscous, thawed

8 cups chicken broth

¼ cup brandy

3 shallots, thinly sliced

2 tbsp garlic paste

2 tbsp extra virgin olive oil

 

Meatballs

1 lb. ground lamb or beef

2 tbsp tomato paste

1 tbsp fresh mint, chopped

1 tbsp fresh parsley, chopped

1 tsp ground coriander

1 tsp ground cumin

1 tsp sea salt

½ tsp ground black pepper

½ tsp dried thyme

½ tsp curry powder

¼ tsp turmeric

¼ tsp chili powder

1/8 tsp ground nutmeg

1/8 tsp cinnamon

 

 Directions


  • Step 1

    In a mixing bowl, mix lamb or beef with herbs and spices and combine.


  • Step 2

    Scoop approximately one teaspoon of the meatball mixture and roll into a ball. Set aside on a baking sheet to add to the soup later.


  • Step 3

    Heat a large pot and add oil, then add shallots and garlic and sauté until fragrant and slightly translucent. Deglaze with brandy and allow to reduce by half. Add the chicken broth and bring to a boil. Once at a boil, add the meatballs and cook for 20 minutes.


  • Step 4

    Once the meatballs are cooked, add PuraVida Foods Mediterranean Couscous and cook for an additional 15 minutes.

    Garnish with more freshly chopped mint and parsley. Enjoy!
