1 (10oz) bag PuraVida Foods Flame Grilled Adobo Street Corn & Peppers, thawed
1 large head cauliflower
1 can black beans, rinsed and drained
1 tbsp fresh lime juice
3 scallions, thinly sliced
1 tbsp ancho Chile powder
2 tsp ground cumin
1 ¼ tsp brown sugar
1 tsp black pepper
1 tsp dried parsley
1 tsp cocoa powder
1 tsp sea salt
½ tsp sugar
Preheat oven to 400°F, and line a baking sheet with parchment paper. Add all the ingredients for the spice blend to a bowl and mix together. Set aside.
Cut cauliflower into 1” thick steaks/slices and season with 2 tbsp of the spice blend.
Place seasoned cauliflower on parchment lined baking sheet and roast in oven for 20 minutes, flipping halfway.
Top the roasted cauliflower with the corn and black bean salsa and finish with a squeeze of lime juice. Enjoy!
