Mole Spiced Cauliflower Steaks

1 (10oz) bag PuraVida Foods Flame Grilled Adobo Street Corn & Peppers, thawed

1 large head cauliflower

1 can black beans, rinsed and drained

1 tbsp fresh lime juice 

3 scallions, thinly sliced

Spice Blend

1 tbsp ancho Chile powder 

2 tsp ground cumin

1 ¼ tsp brown sugar

1 tsp black pepper

1 tsp dried parsley

1 tsp cocoa powder

1 tsp sea salt

½ tsp sugar




  • Step 1

    Preheat oven to 400°F, and line a baking sheet with parchment paper. Add all the ingredients for the spice blend to a bowl and mix together. Set aside.

  • Step 2

    Cut cauliflower into 1” thick steaks/slices and season with 2 tbsp of the spice blend.

  • Step 3

    Place seasoned cauliflower on parchment lined baking sheet and roast in oven for 20 minutes, flipping halfway.

  • Step 4

    Make corn and black bean salsa by mixing the thawed PuraVida Foods Flame Grilled Adobo Street Corn & Peppers, black beans, lime juice and scallions in a bowl.

  • Step 5

    Top the roasted cauliflower with the corn and black bean salsa and finish with a squeeze of lime juice. Enjoy!
