Mediterranean Orzo Pasta Salad

1 (10oz) bag PuraVida Foods Flame Grilled Fajitas Rajas

1 bunch kale, stems removed and roughly chopped

8 oz orzo pasta, cooked according to package

2 oz black olives, sliced

1 cup cherry tomatoes, halved

½ cup feta, crumbled

¼ cup fresh parsley, chopped


Mediterranean Vinaigrette 

½ cup red wine vinegar

2/3 cup extra virgin olive oil plus 1 tbsp, divided

1 tbsp sugar

2 tsp Dijon mustard

1 tsp dried oregano

½ tsp ground black pepper




  • Step 1

    Gather ingredients.

  • Step 2

    Make dressing by combining red wine vinegar, mustard, sugar, black pepper, and oregano in a blender. While the blender is on, slowly add in the extra virgin olive oil. Set aside.

  • Step 3

    Add kale to a large serving bowl and add 2 tablespoons of the vinaigrette. Massage kale with the vinaigrette until all the leaves are dressed.

  • Step 4

    Heat 1 tbsp of extra virgin olive oil in a large sauté pan over medium heat. Add PuraVida Foods Flame Grilled Fajitas Rajas and sauté for 2-3 minutes or until warm. Remove from heat and let cool slightly, and then add to bowl with dressed kale.

  • Step 5

    Add cooked orzo pasta, black olives, tomatoes, parsley, and feta. Dress with about 1/3 cup of the vinaigrette and toss until well combined.

  • Step 6

    Add extra vinaigrette as needed. Enjoy!
