Grilled Peach & Flame Grilled Fajitas Rajas Salad

Ingredients

1 (10oz) bag PuraVida Foods Flame Grilled Fajitas Rajas, thawed

4 yellow peaches, quartered

1 head romaine lettuce, roughly chopped

½ cup goat cheese, crumbled

 

White Balsamic Vinaigrette

¼ cup white balsamic vinegar

1/3 cup extra virgin olive oil

1 tbsp honey

Salt and pepper, to taste

 

Directions

  • Step 1

    Gather ingredients. Make white balsamic vinaigrette by combining vinegar with honey in a blender. While the blender is on, slowly add in the extra virgin olive oil. Set aside.


  • Step 2

    Cut peached into quarters and remove pit. Grill on medium high heat, on both sides until char marks appear



  • Step 4

    On a large serving dish, start assembling, with the romaine lettuce as a base, followed by PuraVida Foods Flame Grilled Fajitas Rajas, then topping it off with the grilled peaches.


  • Step 5

    Drizzle with the white balsamic vinaigrette and sprinkle crumbled goat cheese on top. Enjoy!
