Summer Corn Salad

Chipotle Lime Vinaigrette

¼ cup Red Wine Vinegar

7oz can Chipotle Peppers, Drained (Reserve Liquid)

2 tablespoons Honey

1 tablespoon Adobo juices from can

1 each Lime, Juice only

1/3 cup Extra Virgin Olive Oil

1 teaspoon Sea Salt

¼ teaspoon Black Pepper, Ground

Corn Salad

2 cups PuraVida Elote Corn

1 each Avocado, Peeled/ Diced

1 each Small Cucumber, Medium Diced

½ each Small Red Onion, Small Diced

½ each Mango, Peeled/ Seeded/ Medium Diced

½ cup Thinly Sliced Radish

1/3 cup Crumbled Feta

1/3 cup Chopped Scallions

1. Gather ingredients.

2. Make chipotle lime vinaigrette. Add red wine vinegar, chipotle, adobo juices, honey, and lime juice to a blender. With the blender running, slowly add oil. Season dressing with salt and pepper.

3. Heat medium skillet over medium-high heat. Add Elote corn and sauté until warm. Remove from heat.

4. Toss together Elote corn with avocado, red onion, cucumber, mango, radish, feta, and scallions. Add dressing, mixing to combine. Serve.
