Shakshuka Fajita Rojas

1 tablespoon Vegetable Oil

2 cloves Garlic, minced

1 10oz bag PuraVida Flame Grilled Fajita Rajas

1 teaspoon Chili Powder

1 teaspoon Dried Oregano

1 teaspoon Paprika

1 teaspoon Cumin

14 oz Canned Tomato Sauce

¼ cup Water

4 each Eggs

1 teaspoon Sea Salt 

½ teaspoon Black Pepper, Ground

¼ cup Crumbled Feta

2 tablespoons Chopped Fresh Cilantro

  1. Preheat oven to 400 degrees F.
  2. Heat 1 tablespoon oil in a cast iron pan over medium heat. Add minced garlic and sauté for 30 seconds. Add 1 package flame grilled fajita rajas, chili powder, oregano, paprika, and cumin, stirring until combined and the vegetables are defrosted. 
  3. Add canned tomato sauce and water and bring to a boil. Reduce heat to low and simmer for 10 minutes. Season sauce with salt and pepper.
  4. Make 4 wells in the sauce and crack eggs into the wells. Transfer dish to oven and continue to cook for 7-8 minutes or until the eggs have set. Remove from oven.
  5. Season the shakshuka with salt and pepper. Sprinkle feta and chopped cilantro and serve immediately.
