Chipotle Lime Vinaigrette
¼ cup plain Greek yogurt
1 tablespoon fresh chopped dill
1 teaspoon lemon juice
½ teaspoon minced garlic
Salt and pepper
Mediterranean Couscous Tuna Pita Wrap
1 ea PuraVida Mediterranean Couscous, thawed
8 ounces drained canned tuna
2 each pita pockets
½ cup arugula
½ cup halved cherry tomatoes
¼ cup crumbled feta
- Make dill yogurt sauce. Combine yogurt with dill, lemon juice, and garlic. Season with salt and pepper.
- Combine PuraVida Mediterranean couscous with canned tuna. Spread dill yogurt sauce in pita pockets and fill with arugula, couscous tuna salad, and cherry tomatoes. Top with crumbled feta and serve.
