Sheet Pan Balsamic Roasted Chicken

1 lb Boneless/ Skinless Chicken Breast, Halved

¼ cup Balsamic Vinegar

2 tablespoons Extra Virgin Olive Oil

3 cloves Garlic, Minced

1 teaspoon Dried Italian Seasoning

½ teaspoon Sea Salt

½ teaspoon Black Pepper, Ground

1 10oz bag PuraVida Flame Grilled Fajitas Rajas

2 tablespoons Grated Parmesan

1 tablespoon Fresh Basil Leaves

1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

2. In a medium bowl, mix balsamic vinegar with olive oil, garlic, dried Italian seasoning salt, and pepper. Reserve 2 tablespoons of marinade and set aside. Add chicken to the bowl and let sit for at least 20 minutes. Lay chicken on baking sheet in an even layer and roast for 10 minutes.

3. Remove chicken from oven and add fajita’s raja’s peppers. Drizzle remaining marinade on top and continue baking for another 5 minutes or until chicken is cooked.

4. Remove from oven and garnish with fresh basil and grated parmesan. Serve immediately.
