Pasta Salad
½ cup Red Wine Vinegar
1 tablespoon Sugar
2 teaspoons Dijon Mustard
1 teaspoon Dried Oregano
½ teaspoon Black Pepper, Ground
2/3 cups Extra Virgin Olive Oil plus 1 tablespoon, divided
Grilled Fajitas Rajas
1 10oz bag PuraVida Foods Flame Grilled Fajitas Rajas
1 bunch Lacinato Kale, Stems removed/ Chopped
8 oz Cooked Orzo
2 oz Sliced Olives
1 pint Cherry Tomatoes, Halved
½ cup Crumbled Feta
¼ cup Chopped Fresh Parsley
1. Gather Ingredients.
2. Make Mediterranean vinaigrette by combining vinegar with mustard, sugar, black pepper, and oregano in a blender. While the blender is on, slowly add olive oil. Set aside.
3. Place kale in a large bowl and add 2 tablespoons vinaigrette. Massage kale with vinaigrette until all the leaves are dressed.
4. Heat 1 tablespoon oil in a large sauté pan over medium heat. Add PuraVida Foods Flame Grilled Fajitas Rajas and sauté for 2-3 minutes or until warm. Remove from heat and let cool slightly. Add to bowl with dressed kale.
5. Add cooked orzo, peppers, olives, tomatoes, parsley, feta. Add about 1/3 cup vinaigrette and toss until well combined.
6. Add extra vinaigrette as needed. Serve at room temperature or cold.
*** To make Gluten Free use a gluten free pasta option instead of Orzo. To make Vegan remove Feta cheese ***
