Grilled Mahi Mahi Tacos with Pineapple & Adobo Street Corn Salsa
1 lb Mahi Mahi
1 cup guacamole
½ cup red cabbage, shredded
8 tortillas of your choice
Pineapple & Adobo Street Corn Salsa
1 bag (10 oz) PuraVida Flame Grilled Adobo Street Corn
½ lb Small Diced Pineapple
¼ cup Chopped Cilantro
¼ cup Small Diced Red Onion
1 each Juice of Lime
Fish Seasoning
½ teaspoon Paprika
½ teaspoon Sea Salt
½ teaspoon Ground Black Pepper
¼ teaspoon Garlic Powder
¼ teaspoon Onion Powder
1 tablespoon Extra Virgin Olive Oil
1. Preheat grill to medium-high heat. Gather ingredients and remove Adobo Street Corn from freezer to defrost.
2. In a small bowl, add adobo street corn, pineapple, cilantro, red onion, and lime juice. Allow to marinate for 30 minutes.
3. Combine all of the fish seasoning spices together in a bowl. Drizzle fish with olive oil and liberally season with the spice mix. Place fish on grill and grill until the fish releases from the grates easily, approximately 4 to 5 minutes. Rotate the fish and cook for another 3 minutes.
4. Mix all of the spices together. Drizzle fish with olive oil and season with spice mix. Cook on grill, rotating the fish to create cross marks on all sides.
5. Assemble tacos starting with tortilla then guacamole, fish, pineapple & corn salsa and top with cabbage. Enjoy!
