BBQ Shrimp Skewers with Corn Relish
1 lb 16/20 Shrimp, Peeled/ Deveined
1 cup BBQ Sauce
2 cup PuraVida Elote Corn, Defrosted
2 each Medium Diced Roma Tomatoes
1 each Small Diced Jalapeño
1 each Lime, Juice only
¼ cup Chopped Cilantro
AN Sea Salt
AN Black Pepper, Ground
1. Preheat grill to medium heat.
2. Toss shrimp with BBQ sauce and let sit for 10 minutes.
3. Meanwhile, make corn relish. Defrost Elote corn. Chop roma tomatoes and jalapeno, removing seeds if desired. Combine corn with tomatoes, jalapeno, cilantro, and juice of one lime. Season with salt and pepper.
4. Thread shrimp onto skewers. Cook on grill for 7-8 minutes or until done, turning skewers over halfway through.
5. Remove from heat and serve with corn relish.
