Sear pork loin in a skillet over medium high heat and brown on all sides. Transfer to a roasting pan and add fresh herbs, garlic, and lemon juice. Roast in oven at 350˚F for 20-25 mins, or until the internal temperature reaches 145˚F.
Bring broth to a boil and add quinoa & couscous. Cover and let it cook until all the liquid is absorbed, approximately 5 mins. Remove from the heat and let it cool. Fluff with a fork and add olive oil for flavor.
Chop the parsley and capers and add to a bowl. Stir in the vinegar, olive oil, minced garlic and season with salt and pepper.
Add the PuraVida Vegetable Melange to a skillet, and heat on medium-high heat for 2-3 minutes or until hot throughout. Remove from heat, add fresh thyme and rosemary. Drizzle with lemon juice.
Serve the PuraVida Vegetable Mélange on a plate with the couscous and sliced pork loin. Top with fresh herb sauce. Enjoy!
