Fire-Roasted Vegetable Rigatoni

  • 1 Package of Uncooked Rigatoni Pasta
  • 3 cups PuraVida Vegetable Mélange
  • ¼ cup Butter
  • 3-4 Garlic Cloves, minced
  • 1 tsp Red Pepper Flakes
  • 1 Tbsp Fresh Basil
  • 1/3 cup Parmesan Cheese, grated
  • 2 tbsp Olive Oil
  • 2 tbsp fresh lemon juice
  • Salt and Pepper, to taste
  • Step 1

    Bring a large pot of salted water to a boil, and cook rigatoni according to package directions

  • Step 2

    Meanwhile, add olive oil to a skillet under medium-high heat

  • Step 3

    Add minced garlic, red pepper flakes, and PuraVida Vegetable Mélange and sauté for 2-3 minutes, or enough time to heat and have the garlic become fragrant.

    Step 4

    Once pasta is cooked, drain and add to the pan with the PuraVida Vegetable Mélange

  • Step 5

    Add butter, grated parmesan, fresh lemon juice and sprinkle with basil to taste. Enjoy!
