Black Bean Fajita Wraps

Black Bean Fajita Wraps

1 tablespoon extra virgin olive oil

1 10 oz bag Flame Grilled Fajitas Rajas

1 14 ounce can black beans, rinsed and drained

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon chili powder

½ teaspoon dried oregano

4 large whole wheat tortillas

Avocado Salsa

2 each avocado, pitted

¼ cup chopped cilantro

Juice of ½ lime

To taste salt and pepper

Chipotle Mayo

½ cup mayonnaise

1-2 canned chipotle peppers

To taste salt and pepper

1. Gather ingredients.

2. Make sauces. Mash avocado and combine with chopped cilantro and lime juice. Season with salt and pepper. Combine mayonnaise with canned chipotle peppers, adding more peppers if desired. Season with salt and pepper and set aside.

3. Heat 1 tablespoon oil in a large saute pan over high heat. Add fajitas rajas and black beans and heat until warm, about 3-4 minutes. Add cumin, paprika, chili powder, and dried oregano, stirring to combine. Saute for another minute or until hot. Remove from heat.

4. Assemble wraps. Spread chipotle mayo in the bottom 1/3 of the tortillas. Top with black bean fajita mix and spread avocado salsa on top. Gather the ends of the tortilla towards the center and roll into a wrap. Repeat with remaining ingredients. Serve with extra salsa on the side.
