Veggie Egg Bites

 Ingredients

1 (10oz) bag PuraVida Foods Fire Roasted Primavera Mistura or Fire Roasted Vegetable Mélange, thawed

12 large eggs

1 cup white cheddar cheese, shredded

½ cup cottage cheese

1 tsp sea salt

¼ tsp ground black pepper

 

 

Directions

  • Step 1

    Preheat oven to 300°F and place a baking dish with 1” of water in it to create steam. Gather ingredients.


  • Step 2

    Crack all 12 eggs into a blender, along with the shredded white cheddar cheese, cottage cheese and salt and pepper and blend for 20-30 seconds until light and frothy.


  • Step 3

    Grease muffin tins with cooking spray, and fill ¾ of the way with mixture. Then add approximately 1 tbsp of either PuraVida Foods Fire Roasted Primavera Mistura or Fire Roasted Vegetable Mélange to each tin. You should have enough mixture to fill approximately 12 muffin tins.


  • Step 4

    Bake for 20-25 minutes. Remove from oven and let cool for 5 minutes before removing from tin.


  • Step 5

    If not eating immediately (these are great for meal prep!) warm in the microwave for 15-30 seconds. Enjoy!
